Ingredients
- 4 oz. diced jalapeño (drained) OR 4-6 fresh jalapeño (instructions below)
- 8 oz cream cheese (softened)
- 1 c. sour cream
- 1 tsp garlic powder
- 2 c. shredded cheddar cheese
- ¾ c. shredded parmesan cheese
Topping
- 1 c. Panko bread crumbs
- 4 tbsp butter (melted)
- ¼ c. shredded parmesan cheese
- 1 tbsp fresh parsley
Instructions
- If using fresh jalapeño, roast them until browned and softened, then slice into rounds. If you want the dip to be extra spicy, leave the seeds in; otherwise discard them.
- Preheat oven to 375°F.
- In a mixer, combine the cream cheese, garlic powder, and sour cream. Blend on medium until light and fluffy.
- Add in the cheddar cheese, 3/4 c. of the parmesan cheese, and the jalapeño. Mix again until thoroughly combined.
- In another bowl, combine the bread crumbs, melted butter, the remaining 1/4 c. of parmesan cheese, and parsley.
- Add the cream cheese mixture to a 8 x 8 pan and top with the bread crumb mix.
- Bake until golden brown, 15-20 minutes.
- Serve with chips and a dollop of sour cream or sliced avocado.
