Ingredients
- 20 oz of barbecue sauce (avoid high sugar sauces or it will burn)
- 1 c. chunk pineapple
- 3 chicken breasts
- 3/4 c. chicken broth
- 1 c. pineapple juice from the can
- 1 onion
- 1 tbsp. soy sauce
Instructions
- Peel and thinly slice the onion. Then cut the chicken breast into thirds.
- Start by adding half the BBQ sauce to the Instant Pot.
- Add the breasts to the pot and over with the remaining BBQ sauce.
- Dump in the chicken broth, pineapple juice, pineapples, sliced onion, and soy sauce.
- Stir until chicken in thoroughly coated.
- Place the lid on the Instant Pot and close the steam valve. Set it to “Poultry” on high for 15 minutes.
- Allow a natural release for 5 minutes before switching to a quick release.
- Use two forks to shred the chicken, which should be tender and cooked through.
- You can use it immediately, or package it and save it in the refrigerator for quick, easy lunches!
